Aquí supongo que sí se pegan y queda una masa con la elasticidad y propiedades de la levadura pero sin burbujas, por eso parece grasienta. La técnica es parecida, pero el resultado muy distinto. 		<description><![CDATA[<p>Es probema de espacio. Donde vas a guardar un 10-20% de la masa madre durante 1-2 dias cuando en un par de horas puedes producir lo mismo sin tener que separar/guardar/mezclar.<br />

Levadura industrial si quieres, pero mejor levadura de panadería. Es solo harina, levadura, agua y sal. Es un pan muy compacto y poco alveolado, pero es la manera como se amasa una vez fermentado, lo que hace que quede tan compacto. <br />
